Sous Chef Bar/ Restaurant Kenmare Co. Kerry ( Gastro/Brasserie Style. Key Responsibilities include: " Providing quality food, in line with the high quality standards expected by guests. " Ensuring health and safety standards within the kitchen are maintained. " Ensuring that customers are served great quality food in a manner that is timely. " Managing the kitchen alongside and in the absence of the Head Chef. " Providing training, support & guidance to the kitchen brigade in other sections as required. " Assisting the Head Chef in achieving food cost targets by effectively managing stock control, production and menu engineering. " Responsibilities for rostering, time sheets and HACCP documentation on a daily and weekly basis during the absence of the Head Chef. Requirements for the Role: " Professionally qualified chef with a minimum of 3 years' professional experience in a busy restaurant or hotel - must have mix of bar/restaurant experience. " Have a passion for food. " High attention to detail. " Must have formal HACCP training & experience. " Must be target driven and have an excellent understanding of finances, costs, labour control and time management. " To create an environment that promotes employee morale and encourages the team to have pride and commitment in their work. " Adept with paperwork, legislation and use of computers.
